Here, just a few kilometers from the Mediterranean, olive trees thrive in the region’s limestone-rich soil and warm climate. Albert Farré and Montse Pinent grow their Arbequina olives with care, cold pressing them immediately after harvest in their state-of-the-art mill, located right next to the groves. There’s rarely a rush in an olive orchard—except when it comes to pressing. The faster, the better; it locks in the fresh flavors and preserves the oil’s high levels of antioxidants and minerals. After pressing, the oil is centrifuged and filtered to ensure purity and stability—free from water and fruit particles, making it ideal for cooking without splattering or burning.
